2 eggs
1 1/4 c. warm milk
1/2 c. potato water (if you made the potatoes from scratch, otherwise plain water is fine)
1/2 c. butter
1/2 c. sugar
2 tsp. salt
1 c. mashed potatoes
3 c. flour
1 pkg of instant yeast
Beat the eggs until frothy, then add the rest of the ingredients in the order given. Beat until batter is smooth. Work in enough flour ( about 5 cups) to make a soft dough, knead 8 or 10 minutes until the dough is smooth and elastic.
Place it in a greased bowl, cover with a tea towel and put in the oven with the light on for about an hour or until about doubled in bulk.
Gently deflate the dough, separate into 2 and shape into loaves. Place in greased loaf pans.
Cover with tea towel and back in the oven with the light on for about half an hour. Take the loaves out of the oven, then preheat to 375F and bake them for 30 to 40 minutes until golden and they sound hollow when you tap them.
