Apple Pie Granola

Granola is easy to make, delicious and super versatile.  By versatile, I mean that it's a good way to clean out your pantry if that's something you need to do.  You need a bunch of oats, sugar and fat (in almost any form) and add ins.  Nuts, seeds, dried fruit.  Again, almost any form.Here's what I did this morning;
1 1/2 cups of bran flakes
4 cups rolled oats
1/2 cup pecan halves
1/2 cup flaked coconut
1/4 cup pumpkin seeds
I did not spend much time measuring anything too exactly.  All of it went into a large bowl.

1/2 cup applesauce
3/4 cup brown sugar
1/4 cup honey
2 tsp Apple pie spice
1/4 tsp salt
1/2 tsp vanilla

Stir all this together, then add to the oat mixture and give it all a good stir.
1 egg white
Whip the egg white until it's frothy and stir it into the mixture.

Spread the whole thing on a rimmed baking sheet and spread it out evenly.  Put it in a pre heated 325F oven.  Give it a stir every 15 minutes.  You'll want it in the oven about 45 minutes.  You will think it's not done because it's not crispy, but if it's golden and smells toasty, it's done.  It will be crispy when it cools.
