I was looking to make a vegetarian crock pot sensation. I poked around the internet and the contents of my fridge and this is what I cam up with.
Layer these ingredients in your crock pot;
1/2 small onion, finely chopped
3 cloves garlic, minced
1 small butternut squash, peeled and diced
3 carrots, peeled and chopped
1 red bell pepper, chopped
1/2 cup lentils
A handful of chopped spinach
A good sprinkle each of cumin and cinnamon
A modest sprinkle each of ginger, tumeric, nutmeg and coriander
A little sprinkle of salt after each layer
1 can chick peas
1 large can diced tomatoes
Since I did this in the evening for tomorrow's dinner, I popped this in the fridge at this point. In the morning I'll put it in the base and turn it to low for the day.
