Chicken Dinner Winner - originally posted on Jun 3/12

I found this marinade recipe for chicken in a recent issue of Cosmopolitan.  Yes, I read Cosmo, don't judge me.  The recipe calls for roasting the chicken with cherry tomatoes and red onions, which sounds wonderful, but I didn't have those veggies on hand.  I had regular onions, baby potatoes and asparagus.

The marinade;
2 Tbsp brown sugar
3 Tbsp worchestershire sauce
1/2 tsp chili flakes
2 Tbsp soy sauce
2 Tbsp ketchup
3 Tbsp olive oil
Mix all together in a plastic baggie, then trow in some legs, or thighs or breasts or wings or various assorted chicken parts.  Whatever you got.

Cut an onion and some baby potatoes into bite sized pieces and put it on your pan.  I use parchment paper for easy clean up.
Bake for 30 minutes in a 375F preheated oven.  Toss in some bite sized pieces of asparagus and bake for another 15 minutes.







Now you got yourself a winner.
