PB&J cupcakes - originally posted on May 5/12

Yup, you read that right.  Your favourite sandwich can now be a cupcake.
I'm a big fan of The Chew.  I record it and watch it almost daily.  When Carla Hall made these, I waited for an occasion to make them.  I'm bringing these to a party I've been invited to.  Since I don't know how many people are attending I'm making mini cupcakes.

1 3/4 cups flour
2 teaspoons Baking Powder
1 1/3 cup brown sugar
1/3 cup hot water
4 tablespoons Butter (softened)
2/3 cup  Peanut Butter
2 teaspoons Vanilla
1/2 teaspoon Salt
1/3 cup  oil
3 Large Eggs
1/2 cup sour cream
For the Frosting:
1/2 cup butter
1 teaspoon Vanilla
1/2 cup Strawberry Puree
1 1/2 cups icing sugar
Combine brown sugar and hot water. Mix to dissolve sugar.  Add butter, peanut butter and vanilla to combine. Add in oil.
Combine flour, baking powder and salt.  Add to creamed mixture and stir.  Combine beaten eggs and sour cream.  Add and stir just until combined.
Pour into muffin cups.  For the mini cupcakes I use a plastic piping bag to get the batter into the cups.  You could also use a baggie with a wee corner cut off.  Bake at 350F for 18-20 minutes.  About half the time if you're making the mini muffins.  Let them cool completely before frosting them.

For Strawberry Puree: take half a cup of strawberry jam and puree it.

For the Frosting: In a stand mixer fitted with the paddle attachment, beat the butter, fruit puree and vanilla until well blended.  Add the icing sugar a little at a time while beating until it's the consistency you want.  To be honest, I didn't measure. beginning  You can smear it with a knife or use a pastry bag or plastic bag to pipe it on the cupcakes
