Peach Saskatoon Berry Buckle - originally posted on Sep 11/12

Yup.  Buckle.  A buckle is a cake, with fresh fruit and a crumb topping.  You can use whatever fruit you like or have on hand.  I had peaches and saskatoon berries.

1/4 cup butter, softened
3/4 cup sugar
1 egg
1 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 cup milk
1/4 cup plain yogurt
Cream together the butter and sugar, then beat in the egg and vanilla. In a separate bowl, whisk together the flour, baking powder, salt and nutmeg; add the dry ingredients to the butter mixture alternately with the milk and yogurt mixture.
Spread batter into a greased and floured 9" cake pan.
Top with enough peach slices and sprinkle with berries.  Then sprinkle with the crumb topping.
Crumb Topping;
1/4 cup butter
1/4 cup brown sugar
1/2 cup flour
1 tsp cinnamon
pinch of salt
Mix all of the ingredients until crumbly. Don't over-mix, or you'll get a smooth paste, rather than crumbs.



Bake the buckle in a preheated 350°F oven for 50 minutes to 1 hour, or until it's a deep golden brown and a cake tester inserted into the center comes out clean. Remove the buckle from the oven, and cool it on a wire rack.
