A classic. The humble snickerdoodle is a very basic cookie, but like any basic, execution is everything. This recipe is from a friend who claims to hate cooking and baking because she is terrible at it. I know she isn't terrible at it. This recipe is great and the most important ingredients are the fat, the vanilla and the cinnamon. Since there isn't any "flavourings" like chocolate and there's no texture, like oatmeal, these cookies need the best fat, vanilla and cinnamon.
Here's my take on the recipe;
1/2 cup lard
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla
2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1/4 cup sugar
1 Tbsp cinnamon
Cream the fats and the first measure of sugar together until they are light and fluffy. Add eggs one at a time, beating well after each one. Add the vanilla.
Sift together the flour, cream of tartar, baking soda and salt. Add the dry ingredients to the creamed mixture and stir well. Combine the 1/4 cup sugar and cinnamon together in a small bowl. Shape the dough into 1 inch balls and roll in the cinnamon sugar. Place on ungreased cookie sheet and bake at 400F for 6 minutes.
These are really good dunked in chocolate sauce.
