Zucchini Brownies!
1/4 cup butter, melted
3/4 cup sugar
2 large eggs
2 tsp. vanilla
1 packed cup grated zucchini
2/3 cup cocoa
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
Preheat the oven to 350F.
In a medium bowl, stir together the butter, sugar, eggs and vanilla. Add the cocoa, flour, baking powder and salt; stir a few strokes, then add the zucchini and stir just until the batter is combined. Spread into a buttered or parchment-lined 8x8-inch baking pan.
Bake for 25 minutes, or until springy to the touch but still a bit squidgy in the middle.
