Ramen Noodle sauce options and dipping sauces

 from all over the interwebs

2 Tbsp soy sauce
3 Tbsp rice wine vinegar
1 Tbsp asian chili sauce - like sriracha
2 tsp sesame oil
1 Tbsp sugar
sesame seeds and scallions

Chow Mein Sauce
3 T soy sauce
1/2 crushed vegetable boullion cube
2T water
2T toasted sesame oil
2t corn starch
2t agave syrup
1t rice vinegar
1t sriracha

soy sauce

hoisin sauce
brown sugar
chili paste
rice vinegar

Sauce
1 tablespoon apple cider vinegar
2 teaspoons hoisin sauce
2 teaspoons sugar
1 teaspoon toasted sesame oil
2 tsp soy sauce
1 Tablespoon sriracha

Sesame Chicken Sauce _ this on is a winner!  Mar 23/24

1 tsp oil
1 tsp minced fresh garlic
1/4 cup honey
1/4 cup soy sauce
2 Tbsp ketchup
3 tbsp brown sugar
2 tbsp rice vinegar
1 tbsp sesame oil
2 tsp cornstarch

Cook the garlic in the oil for 30 seconds, then add the remaining ingredients and cook 3-4 min to thicken.

Garnish with;
2 tbsp sesame seeds
2 tbsp sliced green onions

Peanut sauce;

1/2 cup peanut butter
zest and juice of one small lime
2 tbsp soy sauce
1 tbsp fish sauce
1 clove garlic
dash ginger powder
1 tbsp sugar in the raw
1 tbsp chili garlic paste
1/2 cup hot water
Shake it all about. I made this right in the peanut butter jar with what was left-I just threw everything in.

teriyaki
1/2 cup sugar
1/2 cup soy sauce
1/4 cup cider vinegar
2 cloves of garlic, minced
1 tsp grated ginger
1 pinch of hot pepper flakes (or more)
1 pinch of black pepper
Stir together in a saucepan until it's simmering.

Adam Ragusea Garlic Sauce
3-4 garlic cloves 1 small thumb of ginger (about the same amount as the garlic) 1/2 a small fresh chili (or throw the whole thing in) 1 cup water or stock or reserved broccoli water (see below) 1/2 teaspoon onion powder 1/4 cup (60mL) soy sauce 1-2 tablespoons brown sugar (or white sugar + a dab of molasses, or honey) 2 teaspoons mustard 2-3 tablespoons Marmite (or oyster sauce) 1-2 teaspoons toasted sesame oil 2-3 tablespoons cornstarch (or any refined starch) pepper MSG to taste (salt would be fine)
Fry the garlic, chili and ginger in a little bit of oil just until it's soft. then add water, the remaining ingredients in the order listed. make a corn starch slurry to thicken it
