West African Peanut Stew - Vegan

1 onion, diced
1 bell pepper, diced
6 cloves of garlic, minced
1 Tbsp ginger, grated
1 Tbsp cumin
1 1/2 tsp coriander
1 tsp cinnamon
1/4 tsp cardamom
1/4 tsp cayenne
salt and pepper
2 Tbsp tomato paste
2 medium sweet potatoes, diced
1 can chick peas
1 14oz can diced tomatoes
3/4 cup peanuts
1 serrano pepper
3 1/2 - 4 cups vegetable stock
3/4 cup peanut butter
4-5 cups chopped spinach
1-2 Tbsp lemon juice
Garnish with cilantro

Sweat onions, peppers, garlic and ginger in olive oil until soft.
Add spices and seasonings.  Let it cook without burning.
Cook tomato paste for a couple of minutes.
Deglaze with some vegetable stock
Add sweet potatoes, chick peas, tomatoes and half the peanuts.
Let it cook for a few minutes to soften the potatoes.
Add stock and peanut butter.
Let it simmer 20 minutes
Add spinach and lemon juice.
