Samosa Sauce

 from J Cooking Odyssey

1  cup water

1/2 cup sugar

5 Tbsp tamarind pulp or concentrate

1/2 tsp red chili flakes

1/2 tsp coriander seeds, crushed

1/2 tsp salt (original recipe calls for black salt)

(red food colour!?)

1/4 tsp corn starch, mixed in 1 Tbsp water

Boil water and sugar until sugar is dissolved.  Add tamarind, chili and salt and let it cook until it becomes sticky.  Add the corn starch slurry and cook until the corn starch is clear.  Turn off the heat and let it cool a bit.
