Lori's Pumpkin Mole

based on the Pumpkin and Ancho Chile Mole by Patti Jinich and Pumpkin Mole of unknown origin

1 ancho chile
8 puya chiles
4 guajillo Chiles

    -I chose these chiles based on the 2 recipes I mentioned and what I have in my cupboard
  stem and seed the chiles, toast on a hot skillet for 15-20 seconds,
  cover with 1 cup boiling water and let soak for 30 minute


1/2 cup pepitas
1/4 cup slivered almonds
  toast almonds  to light golden


??2 large tomatoes??
  char the tomatoes


5 whole cloves
1/2 stick cinnamon
8 whole allspice berries
(I also added about a teaspoon each of anise seeds, cumin seeds and coriander seeds)
  toast the spices briefly

½ onion
3 garlic cloves
 char onion and garlic, then ad all the previous ingredients including half of the soaking liquid.  Puree until smooth

2 1/2 cups pumpkin puree
2 cups chicken broth
3 Tbsp brown sugar or 1/2 piloncillo
  add
  thicken with tortillas or bread crumbs (panko?) or a piece of toast - Rick Martinez uses animal crackers or corn tortillas
  simmer for 1/2 hours on the stove or in the oven at 350
  salt according to taste obvi

**some recipes also add 

    -prunes or raisins

    -sesame seeds

    -thyme, oregano

    -tomatillos

    -plantain

    -peanuts
