So I found this recipe in the Chiropractors office that I just have to try. It's so different. So I get the receptionist to photocopy it for me. (I know, I know-copyright violation) So, now it's been kicking around my kitchen for weeks so I decide to make it. Except I don't have all the ingredients. HA! When did that ever stop me anyhow? Recipes are a GUIDELINE.
Here's what I came up with;
Heat the pot and put some oil in the bottom
1/2 cup chopped onion
2 cloves of garlic crushed
some ground ginger powder (I wasn't in the mood for grating ginger today)
some salt and coriander
cayenne pepper
-keep cooking the onion until it's soft. Crunchy onions in soup aren't that good.
4 or 5 roma tomatoes-diced
1/2 large sweet potato. probably about 1 1/2 cups diced
2 cans of condensed chicken broth and 2 cans of water
1/2 cup of smooth peanut butter
2 cups of chopped broccoli (stems and flowers)
Simmer on the stove until the sweet potato is cooked.
Delicious!
I know-you're thinkin' "peanut butter soup?" but seriously, trust me, it's good. And it's so nutritious and about 201 calories per bowl.
