You know how I love brownies. I have a few different brownie recipes on this blog. I also love bananas. A few recipes for muffins, cake and loaf reside on this blog too. What you may not know is that I love Chef Michael Smith. The other day, while watching a rerun of one of his tv shows, he featured
banana brownies.
Yes, please! Now, I only had one banana kickin' around my freezer, so I bought some fresh bananas, peeled them, then baked them at 350F for about 10 minutes to make them soft.
- 1 pound dark chocolate
- 1 cup butter
- 4 eggs
- 4 ripe bananas
- 1 cup flour
- 1 cup sugar
- 1 tablespoon cocoa powder
- 1 tablespoon baking powder
Melt the chocolate and butter together in the top part of a double boiler, then let it cool to room temperature. In a separate bowl, mash together the eggs and bananas.
Add the flour, sugar, cocoa and baking powder and stir to combine. Pour in the melted chocolate mixture and stir.
Butter and flour an 9” by 13” baking dish and pour in the batter. Bake at 325F for 1 hour and 15 minutes, until a toothpick comes out clean and the brownies are firm to the touch.
