Peanut Butter Banana Breakfast Bars - originally posted on Oct 15/12

I'm always on the lookout for a healthy breakfast option.  Usually I make a batch of muffins on Sunday night so that I have a quick and healthy breakfast during the week.These bars are a great alternative to muffins.  Even easier than muffins!
1 1/2 cups oats
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
1/2 cup milk
1 large egg
1 large mashed banana
1/4 cup peanut butter
Mix together the oats, sugar, baking powder, salt and cinnamon.
Mix  the vanilla, milk and egg together.
Then add in the mashed banana and peanut butter. Combine all of the ingredients.
Pour the mixture into a lightly greased 8 by 8 inch baking pan. Bake at 350 F degrees for 20 minutes.

Cut into squares and enjoy!
