Egg Nog Pancakes - originally posted on Jan 18/13

I love egg nog.  Not to drink, but as an ingredient.  Ok, the right egg nog, with enough rum and a dash of nutmeg, once a year, is delish.  But mostly I like it as an ingredient; for french toast, waffles, muffins.  You can replace the milk with egg nog in almost any recipe that calls for milk.This morning I made pancakes.
1 1/2 cups flour
1 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
Mix together in a medium bowl.
In another bowl, mix;
1 1/2 cup egg nog
1 egg
2 Tbsp melted butter





Whisk together and stir into dry ingredients.  Don't over mix the batter, stir just until it's combined.
Preheat a non stick skillet to medium.  Drop large spoonfuls onto skillet and cook until they're dry looking on top.  Gently flip and finish cooking.
