Egg Nog Cranberry Muffins - originally posted on Jan 25/13
Yup. Another egg nog recipe. I told you that I froze a bunch of egg nog after Christmas didn't I? Before it went bad, I poured it in freezer bags, then laid the bags flat on a plate until they were frozen. This makes them super easy to store and take up almost no space in my wee apartment sized freezer.
Also, cranberries are cheap after Christmas. They also freeze well and are delicious in coffee cake, muffins and loaves.
Now to the muffins. I found a recipe I like and transformed it to include cranberries and egg nog. You can cut the recipe in half if you want. Also, if you didn't save any egg nog after Christmas (what?!) you could use milk. Use whatever spices strike your fancy when you get to that point in the recipe. Pumpkin pie spice or a blend like that would work well.
2 cups egg nog
2 eggs
1/2 cup canola oil
2 cups brown sugar, lightly packed
1 1/2 cups rolled oats
1 1/3 cups whole wheat flour
1 cup flour
2 tbsp baking powder
1 tsp salt
1/2 tsp cinnamon
dash of cardamon
dash of nutmeg
Whisk together the egg nog, egg and oil. Set aside.
Stir the rest of the ingredients together in a large bowl. Pour the egg nog mixture over all and stir just until the batter comes together. Spoon into muffin tins and bake at 400F for about 25 minutes. When they're done, they will be golden and yummy looking.
