Chocolate Sauce - originally posted on Jun 3/13

I found this recipe as a chocolate syrup to make chocolate milk.  You can cut the recipe in half but you won't want to.  Great for chocolate milk, but it's also a good all purpose chocolate sauce for ice cream, a bowl of strawberries, on top of cheesecake or with a spoon by the light of the fridge at midnight.  But you would never do that...
1 cup unsweetened cocoa powder
1 cup sugar
1 cup cold water (or coffee to make it mocha, or milk to make it richer)
½ tsp salt (or to taste)
1 Tbsp vanilla
Whisk cocoa and sugar together in a saucepan.  Add the water and salt.  Continue to whisk over medium heat until it comes to a boil.  Stirring constantly.  Continue boiling and stirring for 3-4 minutes while it thickens.  It will seem too thin, but it will thicken up when it cools.  Remove from the heat and stir in vanilla.  Let it cool, then keep it in the fridge.  Technically it will keep in the fridge for at least a month.  But it won't last that long.
