You know those days when you need dessert but you have no time and no ingredients? This is a cake for that day.
Even when I have nothing on hand, I always have all of the ingredients in this recipe in my pantry. And I usually have something interesting to toss in. Recently it was a handful of frozen raspberries, but you could use chocolate chips, nuts or granola. Or nothing at all. Use a square glass cake pan - it's easier to stir in a glass pan.
1 1/2 cups flour
4 Tbsp cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1/3 cup canola oil (or melted butter)
1 Tbsp vinegar
1 tsp vanilla
3/4 cup cold water (or coffee or juice...any kind of liquid really)
Stir flour, cocoa, baking powder and soda, salt and sugar in the pan. Even it out and make 3 holes in the mixture. Put oil in one hole, vinegar in another, vanilla in the third hole. Pour the water over the whole thing and stir together. If you used a glass pan, you can peek underneath to make sure it's mixed. Use a rubber spatula to clean up the edges of the pan. Toss in a handful of frozen raspberries, chocolate chips or whatever sounds good to you.
Bake in a 350F oven for about 30 minutes.
