Chocolate Wafer Sandwich Cookies - originally posted Mar 26/17

Will I get sued if I call them homemade oreos?
A chat with a 13 year old a couple of weeks ago included her question "I wonder if you could make oreos?"  Today I'm bringing her a batch.

I found the chocolate wafer cookie recipe here.  I didn't even modify it!
    • 1/2 cup butter, softened

    • 3/4 cup sugar

    • 1/2 cup dark brown sugar, packed

    • 1 teaspoon vanilla

    • 1 cup all-purpose flour

    • 3/4 cup cocoa powder

    • 1/2 teaspoon baking soda

    • 1/4 teaspoon salt

  • 1/4 cup milkCream together the butter, sugar, brown sugar and vanilla until light and fluffy.   Whisk together the flour, cocoa powder, soda and salt. Add the dry ingredients to the butter mixture and mix just to combine. Add the milk and mix just to combine. Form the dough into two 1 1/2-inch-thick logs. Wrap well in plastic wrap and refrigerate for at least an hour.
    To bake: Preheat the oven to 350 degrees F and line 2 baking sheets with parchment. Slice the log of cookie dough into 1/8-inch-thick coins.  Arrange on the baking sheets with about 1 1/2 inches between the cookies. Bake for 8 minutes and then rotate the trays back to front and switch from top and bottom racks. Bake for another 2 minutes or until they are dry looking and firm. Because the cookies are so dark, you can't go by color on these.

For the filling, I used a combination of a few recipes I found on line.  Here's what I did;
  • 1/2 cup of lard
  • 1 3/4 cup of icing sugar
  • 1 tsp vanilla
  • one pinch of salt
  • 2-3 Tbsp cream
I put it all into my stand up mixer and beat it until it was creamy and fluffy.  When the wafers are completely cooled, put the filling on one cookie then top it with another cookie.  I used a pastry bag, you could use a ziplock baggie with the corner cut off or you could spread it on with a knife.  The chocolate wafer cookies are delicious and the icing is basic - sweet and creamy.  I hope they'll be a hit with the 13 year old who sparked the idea.
