Caprese Pasta - Instant Pot

 found on a website called Seasoned Sprinkles

 3 T olive oil

8 oz halved cherry tomatoes

6 cloves garlic, minced

salt and pepper

1/2 tsp red pepper flakes

1 tsp Italian seasoning

 6 Tbsp balsamic vinegar

340 g pkg pasta - rotini or penne

4 cups water (veg broth?)

8 oz mozzarella (pearls or cut into cubes)

1/2 cup parm cheese

Instant Pot saute mode, heat the oil.  Add tomatoes, garlic, S&P, dry herbs.  Saute for a minute, add the balsamic vinegar then simmer another minute.  Add pasta and water.

Pressure cook on high for 4 minutes, quick release.

Add some olive oil to finish if you like.  Toss in the cheeses.
