Phantom Rhubarb Muffins

From Best of Bridge? but I can't find it in my copy


Topping;

1/4 cup chopped pecans

3 Tbsp brown sugar

2 tsp melted butter

pinch cinnamon

 

Muffins;

1 1/3 c flour

2/3 c brown sugar

1/2 tsp baking soda

1/4 tsp salt

1/2 c plain yogurt

1/4 c oil 

1 egg

1/2 - 1 cup chopped rhubarb

Heat oven to 375F

Stir flour, brown sugar, soda and salt.  Separately stir yogurt, oil, egg.  Add the wet mixture to the dry mixture and stir, fold in the rhubarb.  Spoon into muffin cups and sprinkle with the topping.

Bake for 20 to 25 minutes.
