1 medium size zucchini
half an onion
garlic
lemon zest and juice
chili pepper
nutritional yeast
1 cup milk
coriander
white pepper

toast the spices - set aside - grind
fry whole zucchini and large chunks of onion - in the dutch oven - to get some browning and make them soft
add tomatoes
half a cup of pasta water

Melted Zucchini Sauce
2 pounds zucchini - chop small
6 cloves garlic - sliced
1 shallot - chop
1/3 cup olive oil
Cook the allium until they're soft
4 anchovies
add zucchini
stir to coat,
salt
1 tsp chili flakes
Simmer on low, stir every 6 minutes, until soft, Add pasta.
1/2 cup grated parm
juice of 1/2 lemon to finish
