Chipotle Orange Pork Tacos

Inspired
INGREDIENTS
1 boneless pork roast
2 tsp. salt
2 Tbsp. dried oregano
1 Tbsp. brown sugar
1 Tbsp. chipotle chili powder
2 tsp. ground cinnamon
1 tsp. finely grated orange zest
1 cup fresh orange juice
1/4 cup fresh lime juice
6 garlic cloves, lightly crushed

PREPARATION;

Mix oregano, brown sugar, chili powder, cinnamon, orange zest, and salt in a small bowl. Rub all over pork, then transfer pork to slow cooker. Add orange juice, lime juice, and garlic, then toss to coat. Cook on low for 8 hours.  You could do this in your oven on a low setting if you don't want to use a slow cooker.
Using tongs, transfer pork to a shallow bowl that allows you to shred the meet with two forks.
Simmer the juices to reduce and puree the sauce to blend in the garlic cloves.
Serve the sauce alongside the pork for the tacos.  Or find something else to do with this delicious elixir.

Serve shredded pork with tortillas, Mexican cheese, sour cream, cilantro, onions, and hot sauce for assembling taco.
