This is not an earth shattering recipe at all. The other day I had some chicken and needed an idea. I came upon a recipe for teriyaki chicken and this one is a good sauce recipe.Sauces are really hand to have on hand for just such an occasion. When you have some meat and no inspiration. At the grocery store, your bottled sauce options seem unlimited. But the sugar and salt content of these bottled sauces are scary. They also contain ingredients you can't pronounce. This recipe contains sugar, but you can control it. You can reduce it, swap it and use brown sugar, molasses, honey or maple syrup.
Make a double batch and keep it in the fridge for when you need a sauce.
1/2 cup sugar
1/2 cup soy sauce
1/4 cup cider vinegar
2 cloves of garlic, minced
1 tsp grated ginger
1 pinch of hot pepper flakes (or more)
1 pinch of black pepper
Stir together in a saucepan until it's simmering.
Mix together
1 Tbsp cold water
1 Tbsp corn starch
Pour this mixture into the simmering sauce and stir until it thickens up a bit. Cool and pour into a clean glass jar.
Use it to marinate your chicken, pork or steak. You can also use it to baste your meat while it's roasting or on the grill. Also good on rice.
