No Bake Date Cookies

Some call these energy balls.  Others name them for what they don't contain; gluten free, egg free, blah blah.  They're delicious cookies that you don't bake.
Also, look at the ingredients list and you'll notice how flexible this recipe is.  Use what you have or what you like, omit the things you don't or can't have.

2 cups soft pitted dates, apricots or figs.  Or some combination
1/2 to 1 cup walnuts or pecans (soft nuts)
1/3 cup peanut butter, tahini or whatever substitute for peanut butter you like
1/4 cup seeds (flax, sesame, sunflower, pumpkin)
1/4 coconut (or not)
2 Tbsp cocoa powder
2 Tbspt honey (maple syrup, agave syrup)
1/2 tsp. cinnamon (cardamom)
1 pinch of salt

Toss everything in your food processor and pulse until it mixes and the mixture hold together when you squeeze it.   Roll into balls about 1 1/2 in.  Cover and refrigerate to firm them up.  Keep them in an airtight container in the fridge.
