5 cups rolled oats
1/2 cup walnut halves
1/2 cup unsweetened medium flake coconut
1/4 cup pumpkin seeds
1/4 cup flax seeds
2 tsp Apple pie spice (I make my own blend or you can use cinnamon or any combo of spices you like)
1/4 tsp salt
Mix it all together in a big bowl.
1 egg white
Whip the egg white until it's frothy and stir it into the mixture.
Spread the whole thing on a rimmed baking sheet and spread it out evenly. Put it in a pre heated 325F oven. Stir it in about 20 minutes. Bake another 20 minutes. You will think it's not done because it's not crispy, but if it's golden and smells toasty, it's done. It will be crispy when it cools.
