Ingredients:
- 1 lb of beets, peeled and sliced
- ¼ onion, sliced
- 2 garlic cloves, mined
- 1 tsp minced ginger
- 1 chili pepper
- ½ tsp curry powder or ¼ tsp each of ground coriander and cumin
- ¼ tsp heaped turmeric
- ½ tsp cayenne pepper optional
- ¼ tsp heaped salt more to taste
- ½ cup coconut milk more if you like a thick gravy
- ½ cup water more if you like a thin gravy
Instructions:
- Saute onions in coconut oil until soft, add garlic, ginger, spices and salt.
- Add the beets, coconut milk Bring to a boil and let it simmer until the beets are cooked.
- Add more coconut milk and or water if you need it.
- Taste and add more salt if necessary.
- Serve with cooked rice.
