Candied Citrus Peel (and syrup)

peel or zest the citrus

cover with water and bring to a boil then drain immediately.  Repeat two times - this removes the bitterness

in the same saucepan, leave the peel, add one cup of sugar and one cup of cold water

boil for 15 minutes

Drain, reserving the yummy syrup, toss the peel in sugar to coat.  Leave in a single layer to dry completely
