Date Nut Bread - The View from Great Island
2 cups chopped dates (about 8 ounces)
1/4 cup butter - softened
1 tsp baking soda
1 tsp salt
3/4 cup brown sugar
1 cup hot coffee
1 egg
1 tsp vanilla
1 Tbsp cognac or brandy
1/2 tsp baking powder
1 3/14 cup flour
1 cup chopped walnuts
Toast the walnuts.
Put the dates, butter, baking soda, salt and brown sugar in a medium bowl.
Cover with hot coffee, stir and let it sit for 15 minutes
Whisk in egg, vanilla, brandy and baking powder.
Fold in the flour, then the walnuts.
Pour into greased loaf pan. Bake at 350F for 45-55 minutes.
