Eggs Florentine

Saute leeks in butter

add a handful of spinach - saute until the spinack is wilted

4 jammy eggs  

Nestle the jammy eggs in the spincah

grated gruyere over top

Make bechamel;

    1 1/2 T butter

    1 1/2 T flour

    1 1/2 cups milk

    white pepper

pour bechamel over the cheese,  bake at 400F until bubbly
