1 pound Italian sausage (raw, casings removed)
4 cups diced potatoes
1 small onion, chopped
4 cups chicken broth
3 cloves garlic, minced
1 tsp dried Italian seasoning
1/2 tsp crushed red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
Cook in slow cooker for 6-7 hours on low or 3-4 hours on high. (make sure the sausage is cooked)
Lightly mash some of the potatoes.
Add for the last half hour of cooking;
3 cups chopped spinach
1 cup heavy cream
Garnish with;
1/2 cup cooked, crumbled bacon
1/4 cup grated parmesan cheese
Notes from Sue;
-I have never added the flour in this recipe (?) and I always use a full package of bacon in mine and more potatoes because we like it hearty and lots of kale (spinach) too.
