A place for me to keep the recipes I've tried and that work. Along with my personal notes about each recipe. I'll also talk about my thoughts on food and cooking, ranting and or pondering as the occasion dictates or the mood moves.

Orange Bundt Cake - originally posted on May 3/12
I got some oranges because they were leftover from a function at work. So I decided to make a bundt cake. I haven't used the bundt pan of my dreams often enough. I found a recipe that looked like a good start. First, I doubled the recipe, then I cut the butter in half and replaced the remaining butter with plain yogurt. I also cut the sugar in half. Since I was using yogurt, I felt free to eliminate the milk and replace it with orange juice. This will add some natural sweetness and bump up the orange flavour. That's a lot of math, but it's ok because I did it for you. You're welcome.

Pumpkin Spice Cake with brown butter icing - originally posted Jun 8/14
I had somewhat low expectations for this recipe. It looked like a standard pumpkin cake recipe. And since 'brown butter' is very trendy right now I've been avoiding it. I mean, I've been browning butter since before it was cool so I'm annoyed at all the jonny come latelys with their brown butter ways.
Strawberry Cake - originally posted May 12/15
I've looked for a strawberry cake before and been disappointed. Last year this time I made one that called for a packet of jelly powder. I'm not thrilled with using that as an ingredient but the cake got some rave reviews. Rave reviews or not, I didn't want to make it again, so I went searching again.

Yummy Never Fail Chocolate Cake - originally posted May 21, 2013
Another recipe my mom made all the time, was chocolate cake. This cake is always moist. It uses no dairy and no eggs, so it's good for allergies. It's dense enough to be used for a Black Forest or German Chocolate cake or you can add nuts or fruit to the cake batter itself.
I even made my cousin's wedding cake using this recipe. You will soon be famous for this cake.

White Cake - originally posted May 4, 2018
In my opinion, the only reason to eat white cake is as a vehicle for something else.
I accidentally bought strawberries. The next day I had strawberries in my fridge and I wondered what to do with them. That's when I had the idea to slice them, marinate them in a little grand mariner and sugar and serve them over some white cake.
So I found this recipe;
Cream butter with the sugar until light and fluffy. Add eggs one at a time, mixing well each time. Add sour cream and vanilla and mix until combined. Add sifted dry ingredients and mix on low speed until just barely combined.
Pour into greased 9 x 13 cake pan. Bake at 350 degrees for 45 to 50 minutes, or until a toothpick comes out clean. Remove from cake pan as soon as you pull it out of the oven, and place on a cooling rack and allow it to cool completely.It would be great under chocolate sauce, any kind of fruit compote...use your imagination.

Chocolate Chip Cake
I was looking to use up some chocolate chips and had a church potluck coming up so I found this recipe. What intrigued me is the method-dump everything in a bowl and beat? That can't work. It works! Quick, easy and delicious.

Nana's Carrot Cake
Nana made the best carrot cake. Seriously. You probably know by now that I can't leave a recipe alone. Nope, not even Nana's carrot cake recipe. It calls for a cup of oil. A cup? Can't we lighten it up a bit? Oh, yes we can.

Hummingbird Cake
If you've never heard of Hummingbird Cake, ask your mom about it. It's a classic, old fashioned cake. One day I'll look into the history of the name, but for now I'll tell you that it's delicious. Here's my take on it;

Applesauce Snack Cake
I love snack cake! It's cake that you mix in the same pan you bake it. Easy to make, easy to clean up.

Applesauce Cake
This past summer I acquired more apples than I could use before they all went bad so I cooked a bunch up, smooshed and froze them. They were small, so I put them in a large pot, whole (yup, stems and all) a little bit of water in the bottom, lid on, and let them simmer until they were soft. Then I put them through a food mill, which kept all the peels, stems, seeds and core and gave me a beautiful, rosy, naturally sweet pulp. I froze the pulp in small containers-perfect for cakes, muffins or something to eat with yogurt. Of course, you can use a jar of prepared applesauce if you want.

Banana Tea Bread
I was in the mood to use up some bananas from my freezer but not with my usual recipe, so I pulled out a cookbook I don't use all that often; The 99% Fat-free Cookbook. Of course I tweaked it a bit...

Bacon and chocolate
A couple of years ago I dipped crisp 2 inch bacon pieces in dark chocolate. They were ok. I mean, I ate them all, but...meh. They weren't great.
