- Diabetic friendly muffins
- 1 cup greek yogurt
- 1 tsp baking soda
- 1/2 cup unsweetened applesauce
- Mix together and set aside
- 1 cup flour
- 1 tsp salt
- 2 tsp baking powder
- Mix together and set aside
2 eggs
1 tsp vanilla
1/3 cup oil
1/4 cup brown sugar
Whisk together at high speed, switch to low speed and add
1 cup oat bran
Add dry ingredients to the egg mixture alternately with the yogurt mixture
Fold in 2 cups of blueberries
Portion into 12 muffin cups and bake at 350F for 20 minutes.
