Caesar Salad - originally posted on May 16/13

I love a good Caesar salad.  Homemade dressing, with raw eggs, only lasts for a couple of hours.  And makes people nervous.  I found this recipe years ago and have used it many times to rave reviews.Make a batch of the dressing and keep it on hand.
2 cups day old bread cubes
Toss with 2 Tbsp olive oil and bake at 350 for 3 to 5 minutes or until golden and toasty.
Rub the inside of your salad bowl with a cut clove of garlic.  Tear or cut one head of romaine lettuce into bite size pieces.

Dressing;
1/3 cup olive oil
2 garlic cloves
2 hard or soft boiled eggs
2 Tbsp lemon juice
2 tsp anchovy paste (optional)
1 tsp Worcestershire sauce
1/4 tsp black pepper
1/2 cup shredded parmesan cheese
Toss all the dressing ingredients into your food processor or blender and process until smooth.  I'll warn you now; this dressing does not look great, but it's delicious.
Keep the lettuce, croutons and dressing separate until just before serving.  Then, toss it all together and serve.
