Wheat Germ Muffins - originally posted on Jul 22/12

I cleaned out my freezer today.  I seem to accumulate an assortment of parts and pieces of food.  That's mostly because I hate to throw food out and if I have something left that I'm not going to use before it goes bad I toss it in the freezer.  That buys me some time, but also clutters my freezer.  So every now and them I have to take inventory and make something to make room for more.  Today I found; some wheat germ, some pureed pumpkin, a banana and a half, some blueberries and some streusel topping.  Muffins!
I used the recipe on the back of the wheat germ bag.  The recipes you find on packages are usually really good.  I had to alter it though, so I'll tell you what I did.

1 1/2 c flour
1 cup wheat germ
1/2 brown sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2/3 cup frozen berries
1 cup mashed bananas
1/2 cup milk
2 tsp apple cider vinegar
1/4 cup canola oil
2 eggs

Mix all the dry ingredients together in a large mixing bowl.  Toss in some frozen berries.  I had some blueberries, but saskatoon berries or chopped rhubarb or no fruit at all would work well.  Heck, even chocolate chips would work.
In a small bowl whisk the remaining ingredients together.  The pumpkin and mashed bananas came to almost 1 1/2 cups, so I added enough milk to make 1 1/2 cups.  You could use a cup of any mashed fruit or veg.  (applesauce, leftover mashed sweet potato...) The original recipe called for 2 tsp lemon juice, but I didn't have any so I used apple cider vinegar.  The baking powder needs an acid to work so any citrus juice would work here.  Try cream of tartar, or use yogurt in place of some of the milk or oil.
Pour the wet mixture into the dry mixture and stir only until combined.  Over mixing the muffins will make them tough.  It's better to leave the batter a little streaky than to over mix it.
Spoon it in to 12 muffin cups and sprinkle with streusel mix.  Streusel is a mix of  butter, brown sugar, oats or flour and sometimes cinnamon or nutmeg.  You've seen it on coffee cake and some muffins as a crunchy sweet topping.  You wouldn't have to use it in this recipe at all, but I had some in my freezer.
Bake @350F for about 20 minutes.

Easy and delicious!  And now I have breakfast for this week, no need to drive through somewhere on the way to the office.
