My mom had a recipe that didn't fit in her recipe box. It belonged in the cupboard beside the recipe box. Also, it was funny. It was hand written on an extra large recipe card by her friend, Lorraine. Also? It was a recipe for the most delicious meat loaf I've ever tasted.Mom always made it in the same oval casserole dish with a chip in the handle. I love this recipe. Love! Now I'm sharing it with you.
1 - 1 1/2 pounds ground beef
1 chicken type egg
1 small chopped onion
1 garlic clove, minced or 1/2 tsp garlic powder
1 handful instant oats
1 smattering Worcestershire sauce (about a Tablespoon )
salt and pepper
Mix together and shape into a mound smaller than your casserole dish. You want some space in between the meat and the dish.
Sauce;
1 cup tomato sauce or puree
1 cup water
1/4 cup ketchup
2 Tbsp mustard
2 Tbsp brown sugar
2 Tbsp vinegar
Mix together and pour over loaf. Garnish with onion slices.
Bake, uncovered at 350F for about an hour and a half.
