Thai Noodle Salad - originally posted on Apr 24/12
It was hot. 25C hot. Hotter than it had been in months. I was hungry, but also in a hurry to get onto my balcony with a cold beverage and a book. I was also broke so whatever I made had to be with what I had on hand.
This story is about the power of your pantry.
Brown rice vermicelli noodles are cheap, delicious and quick to prepare.
While the water was boiling, I cut up some veggies;
-a handful of spinach sliced, 6 grape tomatoes cut in half, one carrot sliced thin and half a red pepper, sliced thin.
Then I poured the boiling water over the noodles. While the noodles soaked in the boiling water I made peanut sauce in my magic bullet.
Then I drained the noodles and tossed the veggies, noodles and sauce all together.
It was delicious! I think it would be even better if I had some leftover chicken to throw in. Oh, shrimp would be good too.
I was on my balcony in no time flat.
