Thai Noodle Salad - originally posted on Apr 24/12

It was hot.  25C hot.  Hotter than it had been in months.  I was hungry, but also in a hurry to get onto my balcony with a cold beverage and a book.  I was also broke so whatever I made had to be with what I had on hand.
This story is about the power of your pantry.

Pad Thai - originally posted on Jan 18/13

I heard that Pad Thai was tricky to make.  Tricky?  It's noodles.  How tricky can it be?  The first time I made it, it was terrible.
Then I had the opened of the package of tamarind paste in my fridge taunting me.  Reminding me of the failed attempt.  Inspired by this recipe, I tried again.

How to make macaroni and cheese if you're not a chef

This post is dedicated to my brother who wants creamy mac n cheese but doesn't want to feed his family the neon orange stuff.  Maybe the best part about this recipe is that you make the sauce in the time it takes to cook the pasta.  There's no reason to use the boxed stuff ever really.

Fettucine Alfredo

This is not the healthiest dish in the world, but it's a classic and it's delicious.

1/4 cup of butter
1 1/2 cups whipping cream
1/2 pound fettuccine (fresh pasta is best for a dish like this, but dry will do)
2 egg yolks
1 cup Parmesan cheese (the closest you can get to freshly grated Parmigiano-Reggiano cheese the better)
1/2 teaspoon black pepper

Cook cream and butter together in a medium saucepan until they are melted together, around 1 minute. Turn off heat. Meanwhile, cook the pasta.

Strain pasta and add the butter and cream mixture. Turn the heat on medium and add the egg yolks, cheese and black pepper.

Stir vigorously, mixing the egg yolks and cheese in and coating all of the pasta with the sauce.

Serve immediately, garnish with additional parmesan cheese on top.
