JVR's crackers

These crackers are super easy to whip up in your food processor and are delicious.  The awesome thing about making your own crackers, I mean aside from the joy and satisfaction of making your own food, is that you get to customize them.
Add seeds, spices and flavourings.  Or nothing but salt.

Here we go;
1 1/3 cup flour  (regular or grainy flour)
a big pinch of salt
herbs and or spices
seeds
1/3 cup oil  (olive, canola, whatever you have or want to use)
1/4 cup water
flaky salt

In the bowl of a food processor, add the flour, salt, a sprinkle of finely chopped or ground herbs and spices - or not and a handful of seeds.
Give it a good pulse.  Add oil and water.  Pulse until it comes together in a ball.  You may need to add water to get it to come together.  That's ok.  Add a little bit at a time until you get a ball of dough.
Let it rest a few minutes.  If you only let it rest until the oven heats up, that's great.

Turn the oven on to 375F

Roll the dough out on the back of a sheet pan to about 1/8 in thick.  Sprinkle with some flaky salt and use your rolling pin to push the salt into the surface of the dough.  Do that again.  Poke all over with a fork. 
You could use a pizza roller to create squares or triangles or parallelograms or don't cut it at all.  Bake for about 20 minutes until it's deep golden.
If you haven't cut them, break them into big pieces.
Drag them through some hummus or whatever your favourite dip is.

I want to try making them sweet - add cinnamon, then brush with butter and sprinkle with sugar - I think they will taste like Crustos from Taco Time.
