Sunny Boy Cereal, Red River Cereal. Both Canadian products, both hot cereals grown, harvested and produced right here in Western Canada. Yay local food!
Delicious has a hot cereal breakfast but I also wanted muffins. And this mix of grains has to have more uses that just a bowl of cereal. I was unsatisfied with any of the recipes I found so I combined 3 different recipes and made one recipe. I'm so pleased to report that my very first attempt is a success.
I did note some potential for improvement so this recipe will be amended.
2 cups flour |
3/4 cup brown sugar |
1/2 tsp baking soda |
1 tsp baking powder |
1/2 tsp salt add some spice or spice blend |
1 cup cooked cereal - red river or sunny boy or equivalent - what if I soaked the cereal overnight instead of cooking it? |
2 eggs |
1 cup plain kefir |
1/2 cup grapeseed oil |
1 tsp vanilla |
1 cup frozen saskatoons |
mix wet ingredients together |
mix dry ingredients together |
Bake 350F for 30 minutes |
