2 pounds yukon gold or yellow flesh potatoes, cut into bite sized chunks
1 tsp salt
3 eggs
Garnish options;
4 slices bacon, cooked to crisp and cut into large pieces
1 cup grape tomatoes, cut in half
1/2 red onion, finely diced - or pickled
1 bunch chives
sour cream and onion chips
Dressing;
1/2 cup mayo
1/2 cup sour cream
1 Tbsp dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
The potatoes and eggs can be cooked together in the Instant Pot - Put the potatoes, salt 1 cup water and whole eggs in the IP for 4 min on high pressure, quick release. Put in the fridge until cool.
Mix the dressing ingredients together and the dressing will be best after some time hanging out in the fridge.
