Orzo Al Limone

1 medium yellow onion 

1 lemon 

5 tablespoons unsalted butter 

2 1⁄2 ounces grated Parmesan cheese (about 3⁄4 cup), plus more for serving 

1 cup orzo 

Kosher salt and freshly ground black pepper 

Extra-virgin olive oil, for drizzling


Sweat the onion and lemon peels in butter and salt until soft

Pepper

Add orzo

Add 3 cups water

Add salt

Let it come to a simmer

Let it simmer, reduce and thicken, until it’s mostly absorbed but still wet

Add cheese a little at a time and keep stirring

Take off the heat

Add 2 tbsp butter

Zest of lemon

Juice of lemon
