Black Cardamom syrup

Ingredients
1 cup granulated white sugar
1 cup water
4 to 6 black cardamom pods
A tiny pinch of salt (optional) 

 

 Instructions
Crush the pods: Gently crush the black cardamom pods on a cutting board using the flat side of a knife or a mortar and pestle to split the husks and expose the seeds without pulverizing them.
Combine ingredients: Add the water and sugar to a small saucepan over medium heat.
Dissolve and steep: Stir until the sugar completely dissolves and the liquid begins to simmer. Drop in the crushed black cardamom pods and remove the pan from the heat. 

 Infuse: Cover the pan and let it steep for 30 minutes to cool to room temperature. For a deeper, smokier flavor, some users on Reddit suggest letting it infuse or rest longer. 

 Strain and store: Pour the liquid through a fine-mesh strainer into a clean glass bottle or jar.
Keep the syrup sealed in the refrigerator, where it will last for up to two to four weeks.
